½ Cup Flour
1 Tbsp Cajun Spices
1 Packet NEXT! Chick*n Chunks
2 Tbsp Olive Oil
1 Cup Red Cabbage (finely chopped)
1 Tbsp Vinegar
1 Tbsp Sandwich Pickle 
1 Tbsp Dijon Mustard
1-2 Crusty Rolls 
Mayo (to taste)

To Serve:
Finely Chopped Chives


  1. Add the flour and cajun spice to a large bowl. Mix together.

  2. Add NEXT! Chick*n style chunks straight from the packet into the flour mixture. Using your hands, fully coat the chunks with the mixture.

  3. Pre-heat a pan with oil, on medium heat and fry Chick*n until golden and crispy.

  4. In a bowl, mix together the chopped red cabbage; vinegar; pickle, and mustard.

  5. Cut your crusty roll/s and spread each side with mayo.

  6. Add the cabbage mixture and chicken

  7. Sprinkle with chives and serve
